Apple, Cucumber & Celery salad
This recipe is lovely for spring/summer time, and all you need is:
- a chopping board,
- a knife,
- a few basic ingredients,
- and 5 minutes :)
I used to hate celery, BUT! when I tried it with these other flavours, well.. let's just pretend I didn't eat half the bowl. ^^

I love mixing fruits into my salads, apple with celery, mango with cucumber and avocado, or pineapple with red peppers and sweetcorn... I love it all!!
Apple, Cucumber & Celery Salad
If you’re looking for a fresh fruity salad with easy ingredients, this is a great side dish to have at a BBQ, picnic or potluck, in the spring or summer.
Makes 4-5 servings
Time: 5 minutes!
Ingredients:
2 apples
1/2 cucumber
3 stalks of celery
1/3 cup raisins
1 tbsp lemon juice
Instructions:
Chop up the apples, cucumber and celery nice and small, add to a bowl and mix with the raisins and lemon juice.
Done!
Eat it cold right away, it should also store in the fridge for 2, maybe 3 days.
Notes:
- Make sure you’re using sweet apples, these were Gala apples, my favourite :)
- You could switch the raisins for dried cranberries or chopped dates, or simply omit them.
- Walnuts would also be a nice addition to this salad (try about ⅓ cup), I just like to keep it simple.
- The quantities are a guide! Add more of any ingredient to suit your taste!
- Most important tip! When you eat it, get a piece of apple, cucumber and celery on your fork at once. They’re just the best flavours together. YUM.
