Banana Ice-cream
This is probably the fastest ice cream you could ever make. It is so simple, delicious and healthy enough that you can have it for breakfast!
I love to go to the farmers market every weekend to stock up on loads of bananas! Once they're ripe enough, I freeze them so I can make ice-cream & smoothies during the week :)
You want to make sure your bananas are nice and spotty before you freeze them
Peel and roughly chop them into about 5-7 pieces so that your food processor will be able to handle them.
Store the bananas in any bag you have lying around or a tupperware.
Once you're ready to make the ice-cream add as many bananas as you like to the food processor and blend until it forms a smooth and creamy consistency.
You might want to hold down the machine while you blend them.. it shakes like crazy! I'm always scared I'm going to break my food processor, but as long as I press my hand down on the lid and the bananas are chopped relatively small it's OK.
Here's how you make it :)

I love banana ice-cream sooo much! It is super quick to make and really refreshing and creamy too.
Makes about 1 cup of ice-cream
Time: 5 minutes!
Ingredients:
1 frozen banana
(Optional toppings: vanilla extract, cocoa powder, peanut butter, cinnamon, chocolate chips, ...)
Instructions:
If you don't already have frozen bananas, roughly chop up spotty bananas into chunks. (This will make it easier for your food processor to blend later)
Place in a bag or any kind of tupperware and in the freezer for 6 hours or overnight.
Add 1 frozen banana (or more) to your food processor and blend. You may have to add a splash of cold water or plant-based milk to help with the blending.
Keep scraping down the sides with a spatula and blend until it turns into a beautiful creamy consistency.*
Serve in a bowl and eat immediately. (you could even stir in chocolate chips or chopped pecans for a bit of a crunch)

Notes:
- I find that 1 to 2 bananas is the perfect serving size, depending on the size of the bananas. I usually go for 10 to 14 "chunks" of chopped banana.
- Add a handful of your favourite frozen berries for a yummy pink ice-cream, or a handful of frozen mango or papaya for a more tropical ice-cream.
- The less water/milk you add, the thicker it will be, so be patient and keep scraping down the sides if you don't want it turning into a smoothie.
* Optional: At this point you can get as creative as you like. You could add a drizzle of vanilla extract, a pinch of cinnamon, some cocoa powder, peanut butter, or any flavouring you like. Pulse a few times until everything is nicely incorporated.
