Cauliflower rice

On it's own it can be a little dry and plain, but this makes it such a great recipe as you can add whatever dressing you like and it will soak up all the flavours :)

You can use it as you would normal rice: add to a big salad, make a sushi bowl, ... (or just top with a yummy dressing and eat it straight out of the bowl!)  

This recipe is soooo easy!!

All you need is a food processor and a cauliflower. Yep. That's it. :)

I love to make this when I'm short on time to cook regular rice or if I fancy something different... 

Anyway, here's the "recipe" :)

Cauliflower rice

1 ingredient. A food processor. 5 minutes.

That's all you need to make this super easy cauliflower rice.

It's so good, it's healthy and perfect for those summer days where you don't fancy eating something hot.

Makes about 2 cups of rice

Time: 5 minutes!

Ingredients:

1/2 head of cauliflower

Instructions:

Chop the cauliflower into reasonably small pieces, and remove the stems (don't throw them away! I like

to eat them raw, dipped in some homemade hummus)

Add to your food processor and blend at medium speed until the pieces are the size of rice grains. This should take from 5 to 10 seconds.

Done!

Notes:

I find that 1/2 head of a medium cauliflower (about 2 1/2 cups of chopped cauliflower) makes enough for 1 large serving, you can obviously adjust the recipe according to how much you need.

Try adding it to a salad, combining it with your favourite dressing and colourful veg for a super quick lunch or dinner!

It should keep in an airtight container in the fridge for a few days. (maybe add a splash of water to the box to keep it fresh)
