Quick and easy, this recipe has become my go-to summer side!

Just get the couscous cooking, chop the veg and mix it all together. It couldn't be easier!
With cheap and simple ingredients you may already have in your kitchen, there's no excuse!
You can add red or yellow peppers in here too, and leave out the sundried tomatoes if they're not for you. Adjust it however you like :)

Looking for a fresh side for a picnic or BBQ? Here's a quick and easy ingredients if you're short on time that everyone will love!
Makes: 8 servings
Time: 15 minutes
Ingredients:
1 cup couscous
1 1/2 cups boiling water
3 tomatoes
1/2 cucumber
1/3 cup sun-dried tomatoes
Handful of coriander
1/2 cup raisins
3 tbsp lemon juice
2 tbsp olive oil
1/2 tsp garlic powder
1 1/2 tsp herbes de provence
Salt & pepper, to taste
Instructions:
Add the couscous to a heatproof glass bowl, add 1 ½ cups of boiling water and cover with a plate or a lid. It should cook and absorb all the water in 5-10 minutes.
Meanwhile you can prepare the other ingredients, note that you can remove the plate from the couscous when it’s done, to cool down.
Chop up the tomatoes, cucumber, coriander and sun-dried tomatoes. You want everything to be pretty small.
Then mix everything together!
Voilà!
Notes:
- Make sure to let the couscous fully cool down before adding the remaining ingredients, you don’t want cooked cucumber and wilted coriander!
- Adding some chopped mint and parsley would be tasty ;)
- You could easily switch the couscous with the same amount of quinoa (it takes about 15min to cook)
